偷偷的溜到平价NTUC,买了小排骨。就依照我依稀的印象,开始准备糖醋排骨吧!犹记得放长假时,和爸爸一起看台湾的烹饪节目,就想着有一天要做给老公吃。<br />
<br />
这一天终于来临了,成果很好吃,老公说我能去开档了。<br />
<br />
食谱来自台湾某电视节目<br />
*小排骨加入适量的甜酱,酱油,糖,盐,XO酱青及Mirin。我用了保鲜纸将碗包好,放入冰箱腌制一小时。<br />
*把小排骨拿出放到蒸笼里蒸30-45分钟。蒸好的小排骨会流出肉汁,将肉汁放在一旁待用。<br />
*烧好热油,把蒸好的小排骨放入油炸至金黄色,滤油待用。<br />
*砂糖用小火煮至融化,颜色也会慢慢变深(记得,在融化的过程不能搅和,以免结晶)。在锅边倒入刚才留着的肉汁,在加入适量的醋,放入炸过的小排骨(肉汁应盖过小排骨或至少一半),煮至收汁。<br />

老公最近在赶工,想烘个蛋糕来哄哄他,让他开心。家婆和姑姑吃了都赞不绝口,我好开心哦!<br />

做法:<br />
1- 低筋面粉,可可粉及发粉一起过筛备用。<br />
2 - 内馅材料用汤匙搅拌至湖状。<br />
3 - 奶油及黄糖一起打至松发,鸡蛋一个一个的加入打到均匀融合。<br />
4 - 加入一半的面粉,继续搅拌。<br />
5 - 然后倒入鲜奶,再加入剩余的面粉,用橡皮刮刀将面粉拌至无颗粒。<br />
6 - 将一大匙面糊倒入纸杯内,放入一小匙的内馅,再倒入面糊至8粉满。<br />

Ingredients:<br />
150g corn kernels <span style="color: orange;">(I bought the tetrapack corn kernels from Del Monte. I should have put in more effort to do the fresh corn myself, it will definitely taste better)</span><br />
50g salted butter, softened<br />
150g smoked cheese <span style="color: orange;">(I personally find this too much and too salty, should cut down to 100g or less if you are not a cheese lover)</span><br />
15g chives <span style="color: orange;">(I didn't include this)</span><br />
250g plain flour<br />
1 Tbs double acting baking powder<br />
1 1/2 tsp salt<br />
1/4 tsp freshly cracked black pepper<br />
50ml vegetable oil<br />
250ml milk<br />
1 extra large egg<br />
<br />
Method:<br />
1 - Using a pastry brush, butter the cups of a 12-cup muffin tray, set aside. <br />
2 - Preheat oven to 200 deg C<br />
3 - Cut the cheese into roughly 0.5cm cubes. finely chop the chives<br />
4 - Measure out the flour, baking powder, salt and pepper into a large mixing bowl. Add the corn, cheese and chives, mix with a fork<br />
5 - Measure out the oil and milk into a pouring jug. Add the egg, stir with a fork<br />
6 - Make a well in the middle of large mixing bowl, add the oil-milk-egg mixture, and mix with a large metal spoon until the ingredients just combined. TIPS - Do not over-mix the batter. A few clumps of flour won't hurt.<br />
7 - Divide the mixture evenly among the muffin cups. Place these in the oven and bake for 20-25 minutes, or until the muffins area light golden brown. <br />
8 - Remove from oven, let it sit for 5 minutes, before removing from muffin tray. Cool them on a rack for about 20 minutes before eating.<br />

<br />
首先,先解冻。最快的方法就是把密封的鮪鱼片放入冷水或自来水里浸泡,大概20-30分钟就行了。然后把密封的袋子剪开,把鱼片放入容器里(我用的是新的密封袋),再放入两大匙的油,些许柠檬汁,姜茸,酱青,压扁的蒜头,腌制大概30分钟-1小时。如果你喜欢,可放入橙汁/片,让它有鲜橙的香味。用油的用意是让它较湿润,你不用担心鱼片会吸油,我发现一点也不。<br />
<br />
最后把鱼片取出,用KITCHEN PAPERTOWEL吸干多余的腌料,就能放进不沾锅里去煎。其实煎至外层变色,里层还粉红时就能拿起,大概是5分钟煎一面在翻煎另一面(你或许需要多于5分钟哦,如果你买的鱼片厚度超过1寸)。千万别像我煎的兴起,忘了时间,鱼片全熟,却变了太干。<br />

把干香菇用热水浸泡,然后去蒂。如果你是用较大的香菇,就将之剪开。<br />
把淮山削皮洗净,切成约1/2cm<br />
将高汤倒入蒸碗,放入香菇和淮山蒸大约10分钟<br />
把腌好的鸡柳排入,继续蒸10分钟。<br />

1st attempt - the whole cheese and biscuit base floated to the top of the jelly. This is due to the stupid self pour in too much jelly while the cheese base has not set properly yet <br />
<br />
2nd attempt - I didn't beat the cream cheese to creamy, too little time, hence cream cheese still taste as good as the block of cream cheese<br />
<br />
Here come my 3rd attempt. And it is successful!! I used the cup intended for trifle. Hence leaves many wonder why I did such a poor ratio and presentation :p <br />

我选的是Bangkok Balcony。因为本小姐不能吃牛肉和海鲜,就选了Buffet,这样妈妈和妹妹才能各取所需嘛。这是他们的雨季,就只好选比较便宜的室内Buffet, THB790Nett, 不包括饮料。如果选择室外的,就能更全面的欣赏身处81楼的风景,没有玻璃窗挡着嘛, 还能享用日本火锅和鱼翅。不过我倒忘了是多少钱了,印象中好像是THB1250Nett(如果你把所点的食物都吃光,就能享有THB200折扣),包括饮料。<br />

Tip #1 - 要预定这个Buffet只需要点击以上网址的Online Restaurant Reservation, 就会在24小时内收到回复,不过,要提醒你去查一下Junk Mail,因为本小姐就是忘了这一点,白白的花了一些小钱拨电去查询。其实他们老早就电邮回复了。<br />

Tip #2 - 你可以先预定室内的,到了那里如果没有下雨,才付费选择室外的。如果你预定的是室外,到那里又天不作美的话,你就只能呆在室内,负责人说是没有退款的。<br />

<span style="font-style: italic; font-weight: bold;">Ingredients</span><br />
30 tau pok, cut a slit across each one for filling the stuffing<br />
<br />
<u><span style="font-style: italic;">Filling</span></u><br />
350 gms minced pork meat <br />
4 tbsp chinese cooking wine <span style="color: #93c47d;">(I replaced it with mirin - sweet Japanese cooking wine)</span><br />
1 tsp sesame oil<br />
1 tbsp light soya sauce<br />
2 tsp cornflour/cornstarch<br />
4 stalks spring onion, chopped<br />
a handful chinese chives, chopped <span style="color: #93c47d;">(I didn't include this)</span><br />
1 tbsp finely chopped young ginger<br />
1 tbsp finely chopped parsley or coriander/cilantro (include the stalks)(can be substituted with celery) <span style="color: #93c47d;">(I didn't include this)</span><br />
a generous dash of pepper <span style="color: #93c47d;">(I didn't include this)</span><br />
salt to taste<br />
<br />
<u><span style="font-style: italic;">Stock for braising</span></u><br />
6 cups water<br />
1 tbsp oyster sauce<br />
4 cloves garlic skin on, crushed <span style="color: #93c47d;">(I replaced it with Onion as I don't like garlic)</span><br />
salt and sugar to taste<br />

<span style="font-style: italic; font-weight: bold;">Method</span><br />
in a pot, put in all the ingredients for the stock and bring to a boil. using a teaspoon/desert spoon, fill the tau pok with the stuffing and pop into the boiling stock. do 10 tau pok at a time. let the tau pok boil in the stock til cooked, and scoop up with a slotted spoon and set aside. add water to the stock if necessary, bring to a boil again and cook the next batch.<br />
<br />
retain the stock to pour over the tau pok just before serving.<br />

Have been wanting to go and couldn't find time to do so. This is the first action item for my 3 months' break. I sincerely hope my sister and mum will be enjoying the trip. If I continue to proscatinate, I think my mum may be too old to travel with us. I am glad that I plan for it.<br />

The usual blur sotong self - woke up in the morning and realised I forgot to buy travel insurance for three of us!! Jumped out from bed and quickly get connected to DBS in order to buy that. Phew, we are still in time. Reached Airport and being informed that the plane is delayed for another half an hour. My shopping hours get shortened =(<br />
