加了脆颗粒顶部的大理石蛋糕

牛油蛋糕,是爸爸的最爱。可是我又想做些变化,让它不那么的单调。第一次的试验失败了,一次性加入太多的蛋到打发的奶油,成了油水分离的惨况。虽然及时加了面粉补救,蛋糕还是在隔天变得和饼干一样硬。
老公最近在赶工,想烘个蛋糕来哄哄他,让他开心。家婆和姑姑吃了都赞不绝口,我好开心哦!

食谱来自DailyDelicious, 我大概翻译如下:

脆颗粒顶部 (Crumb topping)
我觉得分量太多,最后只倒入了约莫2/3或1/2的量。
85克 ............ 面粉
8克  ...............Hershey's 无糖可可粉
50克 .............金砂糖
50克 .............奶油

用小刀和叉把奶油切小块,快速拌成小颗粒状,放在一旁备用。

蛋糕体
115克 ............砂糖
115克 ............奶油
2粒 ...............蛋 (因为我用的是小蛋,所以用了3粒)
1tsp ............. 香草精
115克 ............面粉1¼tsp ......... 泡打
65克 .............苦甜巧克力,切碎
60毫升......... 动物性鲜奶油(分成 30/30)
1 - 预热烤箱180度。
2 - 将烘焙纸铺在蛋糕模。
3 - 将奶油和砂糖打发。加入香草精拌均。分次加入蛋液拌均。
4 - 面粉和泡打粉一起过筛,将一半的粉类到入做法3,用橡皮刮刀拌合,接着加入30毫升的动物性鲜奶油,用橡皮刮刀拌合,最后把剩下的粉类也加入,刮拌拌匀。
5 - 切碎的苦甜巧克力隔水加热融化,拌入30毫升的动物性鲜奶油。加入大约1/4 的做法4面糊 (原食谱用1/3的面糊),搅拌均匀
6 - 将做法4倒入蛋糕模,再加入做法5,用刀尖画出大理石的线条。
7 - 烤蛋糕约20分钟,再加上脆颗粒顶部,继续烤20-25分钟,用牙签插入无粘粒即可拿出。


Original Recipes in English
Crumb topping
85g ............ Plain flour (all purpose flour)
8g ...............Cocoa powder
50g .............Brown sugar
50g .............Butter
Make the crumb:
Mix all the ingredient together until it looks like bread crumbs.
Set aside until ready to use.

Cake
115g ............ Sugar
115g ............ Butter
2 ................. Eggs
1tsp ............. Vanilla extract
115g ............ Plain flour (all purpose flour)
1¼tsp ......... Baking powder
65g .............. Dark chocolate, chopped
60ml ........... Whipping cream (divided into 30/30)
* Preheat the oven to 180°C
* Line the pan with baking paper.
* Beat the butter with sugar until light and fluffy, add the vanilla extract and egg beat to combine.
* Sift the flour with baking powder and add half of it into the butter, fold to combine, follow by 30ml of whipping cream, fold to combine.
* Add the rest of the flour , fold to combine.

* Melt the chocolate with 30ml of the whipping cream.
* Scoop 1/3 of the cake batter into chocolate and mix until combine.
* Pour both of the batter into the prepared pan and use a tip of knife to create a marble effect.
* Put the cake into the oven and bake for 20 minutes, sprinkle the crumbs on top of the cake and bake for another 20-25 minutes or until toothpick insert in the center of the cake come out clean.
